I'm sure recently you've seen all kinds of weird avocado recipes. I've dabbled in mousse, pudding, and a couple of brownie recipes, and feel as though I've finally reached perfection on these babies. Rich, moist, easy, and you'd have no idea they were made with avocado. Total win for me!

1 large ripe avocado
2 whole eggs 
2 tsp vanilla 
1 tbsp water 
1 3.5oz bar of dark chocolate (I happened to use a theo bar with toasted coconut. yum!)
1 cup + 1 tbsp cocoa powder 
1/4-1/2 cup coconut sugar (use whatever sugar you want, I just wanted to stay paleo for those that are paleo friendly. 1/4c is fine if you like it nice and rich! OR sub a tsp. of stevia to reduce carbs)
1/2 tsp baking soda 
Pinch of salt 

Preheat your oven to 350°F. Grease and/or line an 8" square pan or brownie pan with butter or coconut oil. In a food processor/vitamix, toss in the avocado with your eggs, vanilla and water until smooth. Chop and melt the chocolate (over a water bath is preferred) and mix through your avocado mix in the food processor. Add in cocoa, sugar, baking soda and salt and mix until just combined. If your mixture is too thick, add another 1-2 Tbsp of water to combine. Scoop your mixture out of your food processor into your prepared pan (it's going to be pretty thick), smoot out the top and making sure you spread out the mix to all of the edges. Bake for 20-25 minutes or until cooked through and you do the good ol' fork poke test. Let it cool before taking out of the pan and cutting (or just digging in).
