What happens when I'm at GNC for a quick quest bar on my way to have a coffee and do some programming? I come across GNC's Daily Powdered PB...basically PB2 on steroids (aka protein). I'm not much for peanut butter on its own, so naturally I wanted to bake something interesting with it. While traveling home and doing a mental checklist of what might be in the house already...I decided to stick with some simple ingredients and make something easy. Lucky for me, they turned out great!
1/2 cup unsweetened applesauce
1 very ripe mashed banana
1/3 cup almond meal
1/3 cup GNC daily powdered PB (or just use PB2)
1/4 cup egg whites
1/2 scoop vanilla whey protein
1/4 cup coconut flour
1 tsp vanilla
1.5 tsp baking powder
Here's the easy part: toss it all in a bowl and mix it well. The oven should be preheated to 350F. I used my silicone muffin "tin" (best $9 I've ever spent), and distributed it amongst about 9 of the cups. Around 20 minutes later, you're good to go!
I might've slipped in a few chocolate chips for good measure :) Feel free to spice yours up with some added coconut flakes, chocolate chips, or nuts!
