Looking at the daily 90 degree weather forecast is a pretty solid indication that summer is here. Yes, the humidity sucks and my hair hates it, but it also means it's time for delicious, refreshing salads of all kinds! I love the taste of sweet, crisp watermelon more than pretty much anything when it's deathly hot out, so I thought I'd kick the season off with a super easy watermelon salad! 

3 cups watermelon, cubed
2-3 Tbsp fresh crumbled goat cheese
4-5 mint leaves
1/3 cup pomegranate vinegar (Trader Joes find! Balsamic is also great!)
dash of pink himalayan sea salt


To make the vinegar reduction, add vinegar to a small saucepan over medium heat. Bring to a boil until thick and reduce, about 4-5 minutes.

Toss the goat cheese (lightly) in with the watermelon in a larger than needed bowl. Chiffonade your mint leaves and add. Place contents into your serving dish and garnish with your vinegar reduction, then garnish with the sea salt as desired. Enjoy promptly! Serves about 3.
