It's HOT! I either want to be inside, enjoying the comforts of modern technology, otherwise known as air conditioning, or I'd be quite satisfied at a poolside barbecue chowing down on some refreshing fruit salad and grilled meat of sorts. In this week's post, I thought I'd do a little Americano themed summer salad. Here we go.

2 cups of small cubed watermelon
1 cup of small cubed jicama
1 gala apple, roughly chopped
1 cup fresh blueberries

dressing
1 Tbsp raw honey
Juice from 1 lime
4-5 mint leaves, chopped (feel free to muddle into your liquids)

My recommendations? Don't prep this too far ahead of time. I hate when watermelon has been cut and hanging around too long, losing is crisp, bright texture. And if you're taking this to a party to share with others, dress it once you get there. Also...make it your own! :) Customize it however you'd like. Cherries, strawberries, raspberries. Or maybe lemon instead of lime! I'd stick with some sort of citrus in the dressing, so it'll help preserve apples if you use them. The last thing you want is a red, brown, and blue summer at your 4th of July picnic. Am I right? The recipe should serve 6-8, unless someone gets a little selfish. #itcouldhappen
