So, we're moving next week! Look out, Mount P! I'm trying to stay on top of weekly blog posts, so I thought I'd be resourceful this week and whip something up with ingredients that were just hanging out in the cupboard, waiting to be used. Oatmeal and molasses started screaming at me, so I made something happen. Oh, and these are gluten free! woot!

Dry Ingredients
1 cup gluten free oats, ground
1/2 cup gluten free oats, not ground
1/4 cup coconut sugar
2 Tbsp flaxseed meal
1.5 tsp baking powder
1 Tbsp chia seeds
pinch of salt

Wet Ingredients
1 egg
1/4 cup unsweetened applesauce
2 Tbsp molasses
1 Tbsp grass fed butter

Preheat oven to 350. Put your chia seeds in a small cup with 2 Tbsp of water and let soak for about 10-15minutes. Meanwhile, combine all of your wet ingredients, and all of your dry ingredients. Add the chia mixture to the wet ingredients....then add the wet to the dry and mix well! The mixture will likely be not quite firm enough to ball. Spoon onto a parchment lined cookie sheet  - should make about 12 - and bake for about 10 minutes! Remove and let cool, then bring to the office and share! And then, congratulate yourself for reducing the amount of things you'll have to relocate to your new place! :)
