So....my next powerlifting competition is less than 2 weeks away. What does that mean for me? #cutting. I usually walk around at about 135-136 pounds. But, I'd much rather get rid of a couple of those and compete in the 132 lb. weight class (60kg) rather than bulk up a bit and compete with girls that are 148 lbs. Cutting is never easy. Cutting while trying to maintain strength is even more difficult. But somebody's gotta do it, right?! After a squat session and quick sprints (can't do too much low intensity running because I'll lose all my #gainz!), I came home to enjoy this bad boy (with some slow cooked chicken breast mixed in)...while catching some Vitamin D on this surprisingly warm day. Filling, incredibly satisfying, and hits all the flavor/texture profiles that I'm in need of during this cut. Losing a few pounds doesn't have to taste gross! :) 

Ingredients
1/2c Purple cabbage, chopped
1/4c Shredded Brussels (Trader Joes)
1/4c Broccoli Slaw (Trader Joes)
1/4 Red Pepper, diced
1/4 Red Onion, diced
1 slice Black Label Bacon (Trader Joes), diced
3 dried mandarin oranges (Trader Joes), diced
3 Sweet & Spicy Pecans, crunched up (Trader Joes)
Sauce
2 Tbsp rice vinegar (Trader Joes)
1 tsp. red chili sauce (Asian market - lol. Use whatever spicy you like)
1 tsp. Island Soyaki (Trader Joes)
1 tsp. Raspberry Jalapeño Jam
a few shakes of sesame seeds for garnish

Get a small sauté pan on medium heat. Add diced bacon and onion. While that's cooking (occasionally stir), chop all of your other vegetables up and mix together all of your sauce elements. Add all non-sauce ingredients to a bowl (including onion/bacon...it should be done by now) and mix together. Incorporate as much of your sauce as suits your taste (I'm a total sauce master, so just keep it comin' for me!)...find a cute bowl, garnish with your sesame seeds, grab a sunny spot outside, and enjoy!

PS....as always, customize this!! Sometimes I'll add a small splash of sesame oil into my sauce mix, sometimes I'll crunch up some sesame sticks...whatever's around the house and looks like it might fit, I give it a shot!
