Mini Honey Cookie Bites

Mini Honey Cookie Bites

Yesterday was my lucky day when my friend/colleague surprised me with a huge mason jar of honey that his family had harvested. This stuff is GOOD. Sort of a wildflower honey taste, very clean, with mini crystals formed inside. Heaven! Of course, my mind starts running wild, thinking of all kinds of things I can bake up with this phenomenal honey. First on the list? Some honey cookie bites...mini, of course. :) These are simple, but bring some sunshine to life on a cold, rainy autumn day.

The Ultimate Breakfast Muffin

Tired of overnight oats? Egg muffins are great (I feel like I've consumed hundreds)....but sometimes you just want something with a different texture, right? I was able to find something as quick as egg muffins, with a less redundant texture, and a pretty solid macronutrient ratio. Full. Of. Customizable. Flavor! I was going for a primarily savory, with a hint of sweet flavor combination (as you'll see below)...but take the opportunity to mix in whatever add-ins get you most excited!

Gluten Free Sprouted Rosemary and Sage Crackers

So I enjoy discovering inspiration via what my friends and family are craving. After hounding my med school buddy Bianca for ideas...she confessed her curiosity of creating gluten free alternatives for tortillas and crackers. Since the last time I attempted a flax cracker was a tasteless disaster, I thought I'd give crackers another go, to prove to myself that one can, indeed, make a deliciously savory crunchy snack for all of your gluten-free buddies. The best part? It's actually simple.

Bread 'n Butter Pickles!

I'll admit it. I've been on a pickle kick. Mostly onions. Since I broke the pickle seal when I made my first refrigerator dills a while back....I LOVE PICKLING! I absolutely love the bread & butter pickles from the pickle guy at Eastern Market...so I figured my next pickled cakes would be some sweet, crunchy bread & butter slices. Off we go!

Cranberry Pistachio Whole Wheat Biscotti

Biscotti days were long ago for me...but, after having a conversation about preferred biscotti texture with someone...I decided (since I typically can't stand biscotti I taste in most coffee shops) to bring mine back around!!

Maple Bourbon Mustard

Thanks to continued momentum from my pickle day and preserves day...I decided to embark upon another culinary mystery that I had yet to pursue...MUSTARD! Who doesn't love mustard? (ok, I can probably think of 5 quite easily...but that's besides the point) Mustard of all kinds is phenomenal. I remember there was an entire store, on Schwizer Straße in Frankfurt (awesome neighborhood, rent can't be cheap!) dedicated to just mustards of all kinds. So many options to create amazing condiment variations! So I thought I'd try my very first.

Gluten Free Oatmeal Raisin Cookies

What happens when you bake someone their favorite flavor combo in cookies? ....other people notice and ask where their cookies are. So...these are for my buddy Kristeena, who couldn't indulge in Sean's Gluten Free Peanut Butter Chocolate Chip cookies the other day due to her nut allergy. Oatmeal raisin cookies are some of my favorites...so I thought I'd find a way to "health" them up a little bit, without getting too granola on y'all.

Why Are You Working Out?

This blog post is coming out of my residual thought processes after numerous conversations with both fitness and wellness clients alike. My takeaway from many of these conversations is that it really seems that the bulk of the population hasn't quite taken the time to do some solid introspection and ask themselves exactly why they're doing what they're doing.

Peach Ginger Bourbon Preserves

It's been years since my budding interest in making preserves and jams happened. What's kept this pursuit from fortifying? No idea. Being a punk. Not wanting to add to the collection of possessions that I'd have to bring with me every time my nomadic self relocated. Regardless...the time finally came! I did my reading, got my ball jars, ordered my canning kit and pot (Amazon prime, of course--#impatientnow)...and decided to give it a go! After an afternoon at the Mount Pleasant farmer's market, I decided on some huge local peaches to be the base of my first batch. Here we go!

Kombucha!

Finally! It happened. After years of spending anywhere between $2-5 on kombucha at Whole Foods...I found the ovaries (that was for you, Bernice) to make my own. And guess what...other than requiring a ton of patience, it wasn't that crazy. I cannot wait to try a million different kinds via experimenting with fermentation times, temperatures, teas, and maybe even homemade fruit purees to flavor. Possibilities are nearly endless...

Pickles!

The number of times I get pumped to spend $5-$10 on pickles from the pickle guy at Eastern Market is uncountable. His goods are priced quite reasonably compared to some of the fancy pants pickles you'll find calling your name from the shelves at Whole Foods, as you're innocently perusing the greens to build your next salad. Who knows why it's taken me 31 years to brave the journey of pickling...but it finally happened....with these Refrigerator Pickles ...

Things I Try: Honeycomb!

Things I Try: Honeycomb!

After watching an episode of Shark Tank that involved "BeeThinking," a beehive producer, I got quite curious about bees and honeycombs. I've always enjoyed honey, from peanut butter and honey sandwiches when I was a kid, to learning all about creamed honey during my time in Germany. But why didn't honeycombs ever enter my life? They're fascinating! It became my mission to track some down in DC. After hitting a few local grocers, I found the jackpot (and by jackpot I mean one package) when I came across Some honeycomb from Stockin's Apiaries, a Pennsylvania farm, at Smucker's Farms on 14th Street. I was so pumped, racing home out of excitement to experience. My findings?!?...

Triple Ginger Snaps

Triple Ginger Snaps

Ginger three ways. Candied, fresh, ground. All packed into one thin, crispy delight that can easily be paired with your morning pour over or your afternoon tea. We all need a little gin-jah in our lives. I had the idea to do these after plowing through a box of Trader Joe's Triple Ginger Snaps. They were good. I mean, GOOD. So, of course, I had to try my hand at the creation. Beware, they're time consuming if you want to make 'em thin-thin :)

Gluten Free Banana Blueberry Muffins

Finally settled into the humble, tree-lined abode in the land of Mount Pleasant...I've finally had some time to get back in the kitchen! I wanted to create some carbohydrate goodies for my mornings, so I'm not stuck trying to figure out how to get 210g of carbs at the end of the day. Plus, I had a ton of blueberries that a client of mine had brought after she spent the weekend in her West Virginia house, picking a million berries. Tough life, eh? These are pretty simple, with the help of Trader Joe's Gluten Free Baking Mix. I thought they might turn out a bit dense, but they're quite nice!

So, we're moving next week! I'm trying to stay on top of weekly blog posts, so I thought I'd be resourceful this week and whip something up with ingredients that were just hanging out in the cupboard, waiting to be used. Oatmeal and molasses started screaming at me, so I made something happen. Oh, and these are gluten free! woot! Read More...

Red White and Blue Mojito Fruit Salad

It's HOT! I either want to be inside, enjoying the comforts of modern technology, otherwise known as air conditioning, or I'd be quite satisfied at a poolside barbecue chowing down on some refreshing fruit salad and grilled meat of sorts. In this week's post, I thought I'd do a little Americano themed summer salad. Here we go. Read More...

Apple Sunflower Fennel Salad

Looks like I'm back in full effect. After yesterday's cardamom challenge post, my good friend and former IPE classmate Carol asked what I'd do with fennel, because it's her jam. Apparently it takes very little to inspire me, because all morning I was itching to come home and make something fun with fennel to share. This is a nice, light, summery salad for those that enjoy some fennel from time to time (or all the time! why not?!) Read more...

Watermelon Salad with Pomegranate Drizzle

Looking at the daily 90 degree weather forecast is a pretty solid indication that summer is here. Yes, the humidity sucks and my hair hates it, but it also means it's time for delicious, refreshing salads of all kinds! I love the taste of sweet, crisp watermelon more than pretty much anything when it's deathly hot out, so I thought I'd kick the season off with a super easy watermelon salad! Read more...

Grilled Zucchini and Sweet Potato Salad

Props to Megan Mattson, one of my kick-ass clients, for providing me with this recipe! Megan is in the process of getting herself back in business (fitness-wise) so she can challenge her brothers to the Mattson vs. Mattson vs. Mattson tennis match of the millennium! I, of course, had to make some slight revisions before finalizing idea creation. Read more...
